It Tastes Decadent

I took the old fashioned Chicken Divine recipe that called for mayo, sour cream, cheddar cheese, white wine, lemon, curry powder and canned soup and created it healthy. It was amazing.

Cook and dice your chicken breast, steam your broccoli half way. Make a sauce of cashew cream (thick), a little coconut milk, white wine, lemon juice and curry powder. Mix all the ingredients, pour in a cassarole dish, cover with foil and bake at 350 degrees for half an hour.

I served it to the kid (who is a chef now) and he could not tell the difference between the two! It was creamy and delicious! Best of all, it was healthy! Woo Hoo! l am loving learning to transform old dishes into new healthy ways. I did omit the bread crumb topping, you don't even miss it.

Cashew Cream:

1 1/2 cups raw organic cashews soaked over night and rinsed

34 cup of water

1/2 teaspoon salt

2 tablespoons fresh lemon juice

Put into a blender and blend. Use less water for a thicker cream that you can use like ricotta or sour cream, more water for a thinner sauce that you can use as a dressing or sauce.
